Cerro Las Ranas — the Hill of Frogs — is named for the farm's lagoon, populated by thousands of frogs, in Apaneca within the department of Ahuachapán, El Salvador. Produced by JASAL, a family operation where Jose Antonio Salaverria and his sons manage the farm year-round and run rigorous quality control in the cupping lab. In the honey process, perfectly ripened cherries are pulped then dried — still coated in mucilage — on clay patios, turned constantly for even drying. The result is a slightly-exotic daily drinker: a hint of floral and citric acidity with delicate red fruit from the honey processing, balanced by nutty, chocolaty sweetness. Best at light to medium roasts.
